Duck Fat 2: Leftover Pizza03/09/09
The other day, we ordered some pizza. Thin-crust, mushroom and sausage. A good pizza, made by talented local pizza craftsmen.
It tastes great cold. But you know what would make it better?
That's right.
Frying it in duck fat would make it better.
Look at that lovely shade of brown. The crust has soaked up the bird lard and browned beautifully.
After browning the crust, I flipped it over, face-down, and let the cheese melt and brown in the pool of duck fat. The top layer formed a crispy cheese-crust, and the molten cheese in the center oozed out when I cut the duck-fried pizza slice with a fork. Deliciousness: 9/10.
